Today, I’m sharing a delicious recipe for Apple Cinnamon Bread that my neighbor, Morgan, introduced me to a few weeks ago.

Apple Cinnamon Bread is a great gift for a new neighbor, a new mom, or just because! One recipe is enough for one large loaf pan or three mini loaf pans, which are the perfect size for a “happie” to give away.

Apple Cinnamon Bread
1 1/2 cups all-purpose flour1/2 cup whole wheat flour1 t. baking powder1 tsp of vanilla1 t. baking soda1/2 t. salt1/2 t. cinnamon1 stick salted butter, softened2 eggs1 cup refined sugar3 peeled, chopped Granny Smith apples (very small pieces)1/2 cup chopped pecans (optional)Baker’s Joy cooking spray
Mix first six ingredients together in a small bowl and set aside.
In a mixer, blend together butter, eggs, and sugar. Gradually add flour mixture and mix until blended thoroughly.
Add chopped apples and pecans (if desired). Mix well.
Spray the inside of a 9×5 loaf pan or three mini loaf pans with Baker’s Joy. Pour batter into pan(s). After batter is in the pan(s), sprinkle sugar and cinnamon on top of batter. (No measuring here, just sprinkle enough for a little extra taste).
For 9×5 loaf pan, bake at 350 degrees for 1 hour or until toothpick comes out clean.
For three mini loaf pans, bake at 350 degrees for about 45 minutes or until toothpick comes out clean.
**Oven cooking times vary, so be sure to test your bread before the timer rings. You may need more or less baking time.
Remove bread from oven and turn out loaves onto a cooling rack. Slice to serve!
